These chewy chocolate chip cookies are packed with buttery flavor from brown sugar, vanilla, a hint of cinnamon, and melty chocolate chips.

  • All Purpose Flour, sifted
  • Baking Soda & Salt (if using salted butter, you can skip the salt)
  • Light Brown Sugar & White Sugar
  • Unsalted Butter, Melted
  • One large plus an additional egg yolk for added richness & enhanced chewy texture
  • Vanilla Extract makes everything even better!
  • Semisweet Chocolate Chips (you can also change things up and do a combo of milk chocolate & semisweet or even dark chocolate chips)
  • Cinnamon- Optional but we love just a hint of cinnamon in our chocolate chip or oatmeal cookies– it goes really nicely with the brown sugar flavor.

How to make Chewy Chocolate Chip Cookies

  • After preheating the oven to 325 degrees F and preparing the pan (parchment paper), we started off by sifting together the dry ingredients into a medium sized bowl.
  • Then, in the mixing bowl, we mixed the brown & white sugar, cinnamon, and melted butter until smooth using an electric mixer. We mixed in the egg and egg yolk, and vanilla extract until creamy. Then, mixing on low speed, we added the flour mixture. (You can mix by hand for this step if you’d like!)

  • Finally, stir in the chocolate chips.

  • We dropped the cookie dough by the spoonful onto the lined cookie sheets, and baked for about 15 minutes until the edges of the cookies were golden.

  • Allow to cool in the pan for about 10 minutes or so before moving to the cooling rack. Grab yourself a tall glass of milk and enjoy!!

Ingredients
  

  • 2 cups All Purpose Flour, lightly spooned into measuring cup and leveled. (measure then sift)
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup light brown sugar, firmly packed
  • ½ cup white sugar
  • 1½ sticks unsalted butter, melted (This is the equivalent of 3/4 cup)
  • 1 large egg
  • 1 egg yolk
  • 1 tablespoon vanilla extract
  • 2 cups semisweet chocolate chips (or milk chocolate chips or combination of both– we used semisweet.) We used mini chips but standard size is great too!
  • ½ teaspoon ground cinnamon (Optional. We love cinnamon)

Instructions
 

  • Preheat the oven to 325 degrees F. Lightly grease cookie sheet or line with parchment paper.
  • Sift flour, baking soda, salt into a medium bowl and set aside.
  • Next, in the bowl of your mixer, mix brown sugar, white sugar, cinnamon, and melted butter. Mix at medium speed until smooth.
  • Mix in egg and egg yolk, and vanilla extract. Mix until creamy. Then, with the mixer on low speed (or mixing by hand), add the flour mixture, mixing until just combined. *Be careful not to overmix. Stir in the chocolate chips.
  • Drop the cookie dough by the spoonful about 3 inches apart onto the parchment lined cookie sheet(s). Bake for 15-17 minutes or until slightly golden around the edges.
  • Allow the cookies to cool for at least 5-10 minutes on the cookie sheet before moving them to a wire rack to continue cooling.

Notes

Store in an airtight container. 
**These freeze great also! Layer them in an airtight container or a freezer bag, with parchment paper in between. They will stay fresh for 2-3 months. Thaw at room temperature (about 30 minutes or so).
