How to Make Peanut Butter Oatmeal Cookies

  • Preheat oven to 350℉ and line cookie sheet pan(s) with parchment paper.
  • In a medium bowl, whisk the flour, baking soda, and salt together and set aside.
  • In the bowl of your mixer, add the softened butter, peanut butter, and white and brown sugar. Beat at medium speed until creamy- about two minutes.
  • Next, add the eggs and vanilla extract, mixing until blended.

  • With the mixer on low speed, add the flour mixture. Mix just until combined.Fold in the chocolate chips.

  • Next, add cookie dough by the spoonful-we used a small spring loaded scoop. Place cookie dough about two inches apart to allow for spreading. (You could also use a spoon and roll dough between the palms of your hand before placing on the sheet.)

  • Bake for 10-12 minutes. Baking times may vary depending on the size of your cookies. The cookies will be light brown and firm around the edges. They will firm up in the center as they cool.

Ingredients
  

  • 3 cups Old Fashioned Oats
  • 1 cup All Purpose Flour (121g)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 sticks unsalted butter (226g total)
  • 1 cup creamy peanut butter (254g) (Natural peanut butter doesn't work as well as creamy varieties like Jif or Peter Pan.)
  • 1 cup white sugar
  • 1 cup light brown sugar (pack into measuring cup)
  • 2 large eggs, room temperature (if in a hurry, place eggs in a bowl of warm water for five minutes.)
  • 1 teaspoon vanilla extract
  • 1 cup mini chocolate chips (161g)
