Ingredients
- ½ cup unsalted butter, room temperature (113g) Equivalent to one stick butter.
- 2 cups light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1½ cups all purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup chopped pecans
Instructions
- Preheat the oven to 350 F and grease an 8×8 or 9×9 inch square pan.
- On medium speed, mix the butter, brown sugar, and eggs, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, and salt. Then, with the mixer on low speed, add this mixture to the butter/sugar mixture. *Mix just until blended*. Stir in the chopped pecans.
- Pour the batter into the greased 8 or 9 inch square pan. Bake for 20-25 minutes. *Baking times may vary, peek in as end time gets closer and adjust time as needed. After 15 minutes, if they are becoming darker than you like, you can lightly cover the pan with foil.
- Allow the bars to cool in the pan before slicing. Store the cooled bars in an airtight container.
Notes
This recipe can be doubled, just increase the bake time.
The caramel bars can be wrapped and frozen for up to three months.
