These Cheese Wafers are crisp, light and delicious with rich cheddar flavor and a hint of spice. If you love cheese straws, you will love cheese wafers, and these are even easier to make.

The Rice Krispies in the recipe make them extra light and crisp. You can’t eat just one!

Ingredients for Crispy Cheese Wafers

  • Butter (we used unsalted as we added salt separately)
  • Cheddar Cheese, freshly grated
  • All Purpose Flour
  • Salt
  • Ground Cayenne Red Pepper
  • Rice Cereal (we used Rice Krispies)

How to Make Cheese Wafers

While the oven is preheating, line your cookie sheet(s) with parchment paper. Then, combine the softened butter and grated cheddar, mixing until well combined and creamy.

Add in the flour, salt, and cayenne pepper. It will be come thick, use clean hands if needed! ;0) – Mix or fold in the Rice Krispies. Then, roll into small, one inch balls, placing them about one inch apart from each other.

Lightly flatten each one with a fork (we created a crisscross impression). Bake or 8-10 minutes until lightly browned.

Allow to sit for about 5 minutes or so before moving the wafers to a cooling rack. Cool completely before storing in an airtight container.

Ingredients
  

  • 2 sticks unsalted butter, softened (we add the salt separately)
  • 16 oz sharp cheddar cheese, grated (this is one pound)
  • 2 cup All Purpose Flour
  • ½ teaspoon salt
  • ¼ teaspoon Ground Cayenne Pepper (**Adjust amount to your liking)
  • 2 cups Rice Cereal (we used Rice Krispies)

Instructions
 

  • Preheat oven to 375 degrees F. Line cookie sheet with parchment paper.
  • Mix together the softened butter and grated cheese until well combined and creamy. Then, add in the flour, salt, and cayenne pepper. Mix in the Rice Cereal. The dough will be thick, use clean hands if needed, be careful not to over-mix the dough. If too crumbly, you can add a very small amount of milk (a tablespoon or less) and it should come together.
  • Shape dough into small balls about one inch wide and place onto a prepared cookie sheet, spacing them about one inch apart. Lightly flatten them with a fork. (We made a crisscross pattern).
  • Bake at 375 degrees F for 8-10 minutes, or until lightly browned. Remove the pans from the oven, allow the wafers to sit for about 5 minutes to firm up before moving to a cooling rack.
  • Cool completely and then store in an airtight container.
