2sticksunsalted butter, softened(we add the salt separately)
16ozsharp cheddar cheese, grated(this is one pound)
2cupAll Purpose Flour
½teaspoonsalt
¼teaspoonGround Cayenne Pepper(**Adjust amount to your liking)
2cupsRice Cereal(we used Rice Krispies)
Instructions
Preheat oven to 375 degrees F. Line cookie sheet with parchment paper.
Mix together the softened butter and grated cheese until well combined and creamy. Then, add in the flour, salt, and cayenne pepper. Mix in the Rice Cereal. The dough will be thick, use clean hands if needed, be careful not to over-mix the dough. If too crumbly, you can add a very small amount of milk (a tablespoon or less) and it should come together.
Shape dough into small balls about one inch wide and place onto a prepared cookie sheet, spacing them about one inch apart. Lightly flatten them with a fork. (We made a crisscross pattern).
Bake at 375 degrees F for 8-10 minutes, or until lightly browned. Remove the pans from the oven, allow the wafers to sit for about 5 minutes to firm up before moving to a cooling rack.
Cool completely and then store in an airtight container.
