Egg and Sausage Casserole

This simple and savory Egg and Sausage Casserole is perfect for breakfast or brunch!

Ingredients
  

  • 16 oz sausage
  • 8 large eggs
  • 2 cups milk
  • 1 cup grated cheddar (sharp or extra sharp)
  • 1 teaspoon salt

Instructions
 

  • Preheat oven to 350 degrees F. Spray a 9×13 baking dish (or similar size) with cooking spray.
  • Brown the sausage in a skillet over medium heat, breaking up the sausage as it cooks. Drain off the fat.
  • Beat the eggs in a bowl. Add milk, salt, grated cheddar and combine. Stir in the sausage. Pour or spoon the mixture into the baking dish. Bake for 30-40 minutes or until the center is firm.
  • You. may need to cover the top lightly with aluminum foil if it starts to become too brown. Serves 6. Leftovers can be stored covered in the refrigerator for a few days.

Notes

This egg and sausage casserole can also be prepared in advance, covered, and baked the next day.
