Preheat oven to 350 degrees F. Spray a 9x13 baking dish (or similar size) with cooking spray.
Brown the sausage in a skillet over medium heat, breaking up the sausage as it cooks. Drain off the fat.
Beat the eggs in a bowl. Add milk, salt, grated cheddar and combine. Stir in the sausage. Pour or spoon the mixture into the baking dish. Bake for 30-40 minutes or until the center is firm.
You. may need to cover the top lightly with aluminum foil if it starts to become too brown. Serves 6. Leftovers can be stored covered in the refrigerator for a few days.

This egg and sausage casserole can also be prepared in advance, covered, and baked the next day.
