- Preheat oven to 350℉ and line cookie sheet(s) with parchment paper.
 - In a medium sized bowl, add flour, baking soda, ginger, and one teaspoon cinnamon. Set aside.
 - In the bowl of a mixer, mix softened butter until smooth. Gradually add one cup sugar until lightened in color and fluffy (5-6 minutes).
 - Next, mix in the egg and molasses to combine.
 - Add in the dry ingredients, mixing in the flour mixture until just combined.
 


- Shape dough into balls. Dip one side of each ball into the remaining 1/4 cup sugar.
 

- Place on parchment lined baking sheet for 12-15 minutes. When done, move the cookies to a cooling rack. This recipe makes three dozen ginger snap cookies!
