Preheat oven to 350℉ and line cookie sheet(s) with parchment paper.
In a medium sized bowl, add flour, baking soda, ginger, and one teaspoon cinnamon.Set aside.
In the bowl of a mixer, mix softened butter until smooth. Gradually add one cup sugar until lightened in color and fluffy (5-6 minutes).
Mix in the egg and molasses to combine.
Next, add in the flour mixture, mixing at low speed until just combined.
Shape dough into balls. Dip one side of each ball into the remaining 1/4 cup sugar.
Place on parchment lined baking sheet for 12-15 minutes. When done, move the cookies to a cooling rack.
