Granola Bars Recipe

This delicious recipe for Granola Bars couldn’t be simpler to make, with oats, coconut, nuts, honey, and more! You don’t need to buy granola bars ever again, these are so much healthier and more flavorful too.

Ingredients

  • Oats (We use regular oats as opposed to quick oats)
  • Honey
  • Vanilla Extract
  • Flaked Coconut (we like to use sweetened)
  • Brown Sugar (we used light brown but dark would be fine also)
  • Butter
  • One cup of “Add-Ins” of your choice- We used a combination of chopped pecans, Rice Krispies cereal, and golden raisins. Other options are chopped almonds or walnuts, pumpkin seeds, and chocolate chips (we like mini chips).

How to Make Easy Granola Bars

  • Preheat oven to 325 degrees F
  • Line a 9×9 inch pan with parchment paper,, allowing additional length to extend past the sides of the pan for easy lifting.
  • In a large bowl, stir together the oats, flaked coconut, salt, brown sugar, and the 1 cup of your mixture (we used pecans, Rice Krispies, and golden raisins).
  • In a small bowl or measuring cup, combine the honey, melted butter, and vanilla.
  • Next, add the wet ingredients to the oat mixture and combine until everything is well blended and evenly distributed.
  • Spread the mixture into the pan, firmly pressing with the back of a spoon or spatula.
  • Bake at 325 degrees F for 30 minutes. Cool completely in the pan (preferably on a cooling rack). They will become more firm as they cool.

  • Once cool, lift from the pan (using the excess parchment paper as handles). Separate from the parchment paper and cut or break into bars.

Notes

Mixture: The great thing about these granola bars is that there are endless variations that you can create. 
We used pecans, raisins, and Rice Krispies to equal one cup of our “mixture”. You can swap in your choice of chopped almonds, chopped walnuts, chocolate chips (we like mini chips), pumpkin seeds, and more. Whatever your mixture is should equal a total of one cup.
