Preheat oven to 325 degrees F
Line a 9x9 inch pan with parchment paper,, allowing additional length to extend past the sides of the pan for easy lifting.
In a large bowl, stir together the oats, flaked coconut, salt, brown sugar, and the 1 cup of your mixture (we used pecans, Rice Krispies, and golden raisins).
In a small bowl or measuring cup, combine the honey, melted butter, and vanilla.
Next, add the wet ingredients to the oat mixture and combine until everything is well blended and evenly distributed.
Spread the mixture into the pan, firmly pressing with the back of a spoon or spatula.
Bake at 325 degrees F for 30 minutes. Cool completely in the pan (preferably on a cooling rack). They will become more firm as they cool.
Once cool, lift from the pan (using the excess parchment paper as handles). Separate from the parchment paper and cut or break into bars.
