  • Preheat oven to 350℉
  • Grease a 9×13 baking pan. You can add parchment paper for easy lifting out of the pan.
  • In a medium bowl add the all purpose flour, baking soda, and salt. Whisk and set aside.
  • In a large mixing bowl, add the softened butter and brown sugar. Beat on medium speed until well mixed.
  • Add the eggs and vanilla extract and mix until the yolks are well blended.
  • Next, with the mixer on low speed, mix in the flour mixture just until combined.
  • Stir in the oatmeal and toffee bits.
  • Batter will be somewhat stiff. Spread into the prepared pan.

  • Sprinkle remaining toffee bits of the top.
  • Bake 20-25 minutes or until a toothpick comes out clean. Cool completely before cutting into bars.

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 sticks unsalted butter
  • 1 cup light brown sugar packed into cup
  • 2 ½ cups quick or regular oatmeal I used quick
  • vanilla extract
