Oatmeal Toffee Bars
These moist and flavorful Oatmeal Toffee Bars are simple to make and have amazing flavor from oatmeal, brown sugar, vanilla, and toffee bits.

- 1 ½ cups All Purpose Flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 sticks unsalted butter
- 1 cup light brown sugar packed into cup
- 2 ½ cups quick or regular oatmeal I used quick
- vanilla extract

Preheat oven to 350℉
Grease a 9x13 baking pan. You can add parchment paper for easy lifting out of the pan.
In a medium bowl add flour, baking soda, and salt. Whisk and set aside.
In a large mixing bowl, add the softened butter and brown sugar. Beat on medium speed until well mixed.
Add the eggs and vanilla extract and mix until the yolks are well blended.
Next, with the mixer on low speed, mix in the flour mixture just until combined.
Stir in the oatmeal and toffee bits.
Batter will be somewhat stiff. Spread into the prepared pan.
Sprinkle remaining toffee bits of the top.
Bake 20-25 minutes or until a toothpick comes out clean. Cool completely before cutting into bars.
