- Preheat oven to 350℉. Line baking sheet with parchment paper.
 - Fill each phyllo shell with diced tomatoes and top with a spoonful of your favorite store-bought pimento cheese.
 - Sprinkle with bacon bits (Everything is better with bacon bits!)
 - Bake fo 5-8 minutes or until the pimento cheese is warm and bubbly. So good!

These savory Pimento Cheese Bites couldn't be easier to make! They are the perfect pick-up appetizer.
Ingredients
- 2 packages mini Phyllo Shells (two 15 count boxes of Athens Brand-frozen section)
 - 1 cup store-bought pimento cheese
 - 2 roma tomatoes, diced
 - pinch of salt
 - dash of pepper
 - bacon bits (for sprinkling over top before baking)
 
Instructions
- Preheat oven to 350℉. Line baking sheet with parchment paper.
 - On the lined cookie sheet, fill each phyllo shell with diced tomatoes and top with a spoonful of pimento cheese.
 - Sprinkle with bacon bits.
 - Bake for 5-8 minutes or until the pimento cheese is warm and bubbly. Serve warm.
 
Notes
The frozen phyllo shells do not need to be thawed before using.
Serve warm. Leftovers should be refrigerated.
