Pimento Cheese Bites

These savory Pimento Cheese Bites couldn't be easier to make! They are the perfect pick-up appetizer.

- 2 packages mini Phyllo Shells (two 15 count boxes of Athens Brand-frozen section)
- 1 cup store-bought pimento cheese
- 2 roma tomatoes, diced
- pinch of salt
- dash of pepper
- bacon bits (for sprinkling over top before baking)
Preheat oven to 350℉. Line baking sheet with parchment paper.
On the lined cookie sheet, fill each phyllo shell with diced tomatoes and top with a spoonful of pimento cheese.
Sprinkle with bacon bits.
Bake for 5-8 minutes or until the pimento cheese is warm and bubbly. Serve warm.
The frozen phyllo shells do not need to be thawed before using.
Serve warm. Leftovers should be refrigerated.
