  • olive oil

You can easily swap in your favorite vegetables depending on what you have on hand or what is in season.

How to Make Roasted Vegetable Medley

After slicing up your vegetables, place them in a bowl along with olive oil, salt, and pepper. Toss the vegetables until everything is coated with olive oil. Then, spread on a baking sheet.

Recipe Variations

Feel free to swap in your favorite veggies to change up this vegetable medley to your liking. Sometimes it comes down to what you have on hand!

Seasonings: We kept things simple with salt and ground pepper along with pressed garlic and olive oil for flavoring, but you may also like to try some of these common vegetable seasonings:

  • A sprinkling of Italian Seasoning (or basil, thyme, oregano, rosemary)
  • A squeeze of lemon just before serving
  • A sprinkling of lemon pepper
  • A drizzle of balsamic or apple cider vinegar before serving
  • A sprinkle of Parmesan before serving

Ingredients
  

  • 2 medium onions, cut into slices
  • 3 medium zucchini, sliced
  • 2 medium yellow squash, sliced
  • 1-2 red or green peppers, sliced (or one of each)
  • 3 garlic cloves, pressed or very finely sliced
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground pepper

Instructions
 

  • Combine the ingredients in a small bowl, tossing to evenly coat with olive oil. Spread on a baking sheet. Bake at 400 degrees F for 25-35 minutes or until tender, stirring once halfway through.
  • Baking times may vary depending on your oven, how thinly your vegetables are sliced, etc. and so peek in as the end time approches.

We kept things simple for today’s recipe using salt and pepper (along with the pressed garlic & olive oil) for seasoning & flavor. Below are other variations you may like to try!
