Vegetable Medley

This colorful roasted Vegetable Medley is so simple to make, versatile, and tastes amazing.

Ingredients
  

  • 2 medium onions, cut into slices
  • 3 medium zucchini, sliced
  • 2 medium yellow squash, sliced
  • 1-2 red or green peppers, sliced (or one of each)
  • 3 garlic cloves, pressed or very finely sliced
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground pepper

Instructions
 

  • Combine the ingredients in a small bowl, tossing to evenly coat with olive oil. Spread on a baking sheet. Bake at 400 degrees F for 25-35 minutes or until tender, stirring once halfway through.
  • Baking times may vary depending on your oven, how thinly your vegetables are sliced, etc. and so peek in as the end time approches.

Notes

We kept things simple for today's recipe using salt and pepper (along with the pressed garlic & olive oil) for seasoning & flavor. Below are other variations you may like to try!
  • Italian Seasoning (or basil, thyme, oregano, rosemary)
  • Lemon Pepper
  • A squeeze of lemon just before serving
  • A drizzle of balsamic or apple cider vinegar before serving
  • A sprinkle of Parmesan before serving
