Combine the ingredients in a small bowl, tossing to evenly coat with olive oil. Spread on a baking sheet. Bake at 400 degrees F for 25-35 minutes or until tender, stirring once halfway through.
Baking times may vary depending on your oven, how thinly your vegetables are sliced, etc. and so peek in as the end time approches.

We kept things simple for today's recipe using salt and pepper (along with the pressed garlic & olive oil) for seasoning & flavor. Below are other variations you may like to try!
