Apple Bread

This moist Apple Bread Recipe is flavored with pieces of granny smith apples, cinnamon, and brown sugar.

Ingredients
  

For the Diced Apples

  • 2 Tablespoons white sugar
  • 1 Teaspoon cinnamon

For Apple Bread

  • 2 Large Granny Smith Apples
  • 2 cups All Purpose Flour
  • ½ cup White Sugar
  • ½ cup Brown Sugar
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 large eggs, beaten
  • ¾ cup vegetable oil (we use canola oil)
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • ½ cup pecans (optional)

Instructions
 

  • Preheat oven to 350 degrees F. Grease a 9x5 inch loaf pan. (We also like to line our pans with a long strip of parchment so that loaf can easily be lifted.)

For the Diced Apples

  • In a medium sized bowl, Dice the apples and toss with two tablespoons sugar and one teaspoon of cinnamon. Set Aside

For Apple Bread

  • In a large bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, brown sugar and white sugar. Set aside.
  • In a medium bowl, add the beaten eggs, vegetable oil, milk, and vanilla. Mix to combine. Set this egg mixture aside.
  • Next, add the egg mixture to the flour mixture and stir to combine. Gently stir in the apples (and pecans if using pecans). Pour the batter into the pan. It is a thick batter.
  • Bake at 350 degrees for 55-60 minutes. If the top begins to get too brown, cover it loosely with aluminum foil. Check for doneness at 50 minutes. It is done when an inserted toothpick comes out clean or with just a few moist crumbs attached.
    Let the loaf cool in the pan for an hour. Remove from the pan and continue to cool completely.
