Apple Salad

This light and fruity apple salad with grapes, pecans, and a light coating of lemon yogurt is so refreshing and delicious. Enjoy it on its own when you're craving a little something sweet, or as a side dish for spring and summer.

Ingredients
  

  • 1 unpeeled red apple, chopped
  • 1 unpeeled green apple, chopped
  • cup seedless green or red grapes, halved (adjust amount to your liking)
  • ¼ cup chopped pecans (For even more flavor, you can toast the pecans and cool before adding to the salad.)
  • 6 oz lemon yogurt (or enough for a light coating)

Instructions
 

  • Combine the fruit and nuts in a medium sized bowl. Fold in the lemon yogurt to evenly coat. Cover and refrigerate.

Notes

You can substitute crushed walnuts or almonds if you'd like or even a different flavor of yogurt.
Adding sliced red grapes or craisins is another option for more color!
This makes about four servings, adjust the ingredient amounts to suit your needs!
