Banana Oatmeal Chocolate Chip Cookies

These delicious Banana Oatmeal Cookies have amazing banana flavor, along with chocolate chips, cinnamon, and pecans!

Ingredients
  

  • cups All Purpose Flour
  • 1 cup light brown sugar (you can substitute white)
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 2 sticks unsalted butter, softened (1 cup)
  • 1 large egg
  • 3 ripe bananas, mashed (ours were medium sized)
  • 2 cups quick oats
  • 1 cup semi-sweet chocolate chips
  • ½ cup chopped pecans (you can substitute walnuts if you'd like)

Instructions
 

  • Preheat oven to 350℉ and line cookie sheets with parchment paper.
  • In your mixing bowl, add the flour, salt, baking soda and cinnamon. Whisk to blend and set aside.
  • Cream the softened butter and sugar.
  • Add the egg, mashed bananas, and oats and mix well.
  • Gradually stir in the chocolate and nuts until well combined. Drop cookie dough by the spoonful onto parchment lined cookie sheets.
  • Bake for 8-10 minutes. Makes 6 dozen cookies. After baking each batch, use a spatula to transfer them from the pan to a cooling rack. Cool completely before storing in an airtight container.
