Blueberry Pie

This light and delicious Blueberry Pie has wonderful flavor! It is so easy to make and perfect for spring and summer.

Ingredients
  

  • 1 unbaked pie shell

Filling

  • 1 cup sour cream (full fat)
  • 2 tablespoons All Purpose Flour
  • ¾ cup white sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 egg, beaten
  • cups blueberries (fresh or frozen, thawed)

Topping

  • 3 tablespoons all purpose flour
  • 3 tablespoons melted butter
  • 3 tablespoons chopped pecans or walnuts

Instructions
 

  • Preheat oven to 400℉

Topping

  • Combine the topping ingredients: flour, melted butter, and chopped nuts. Set aside for later.

For the Blueberry Pie

  • Combine the first 6 filling ingredients(sour cream, flour, sugar, vanilla, salt, and beaten egg). Mix on low speed for 5 minutes with an electric mixer.
  • Fold in the blueberries.
  • Pour the filling into the unbaked pie shell. Bake at 400℉ for 25 minutes. Next, sprinkle with the topping. Bake for ten minutes more. Chill before serving.
