Ingredients

  • ½ cup white sugar
  • ½ cup brown sugar
  • teaspoons ground cinnamon
  • ½ teaspoon salt (adjust amount to your liking)
  • 1 large egg white
  • 1 teaspoon vanilla extract
  • 1 pound pecan halves (about 4 cups)

Instructions

  • Preheat the oven to 250 degrees F and line a baking sheet with parchment paper.
  • Combine the cinnamon, white sugar, brown sugar, and salt in a small bowl and set aside.
  • Pour egg white and vanilla into a large bowl and whisk it until it reaches a frothy consistency. (Egg white will be bubbly/foamy but not strong enough to hold shape). Next, add the pecan halves, tossing to coat with the egg white mixture.
  • Next, slowly add the sugar mixture to the bowl of pecans, stirring to evenly coat them. Spread the pecans onto a parchment paper-lined baking sheet.
  • Bake the coated pecans for ten minutes on a baking sheet. Give them a stir (while still keeping them in a single layer). Continue baking, but stir every 10-15 minutes.
  • Total baking time is 30-50 minutes- they are done when the pecans have evenly browned.
  • Allow to cool completely before storing at room temperature in an airtight container or ziplock bag.
