Cheese Straws

Ingredients
  

  • 16 oz sharp cheddar cheese, grated (1 lb)
  • sticks Unsalted Butter, softened (310g)
  • 1 tsp tabasco sauce (5ml)
  • 4 cups all purpose flour, sifted (500g) (lightly spoon into measuring cup and level off, or weigh with digital scale)
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • ¼ teaspoon cayenne pepper (adjust to your liking)

Instructions
 

  • Preheat oven to 375 ℉
  • Combine the cheddar cheese, softened butter, and Tabasco sauce. Set aside.
  • Next, whisk together the flour, paprika, salt, and cayenne pepper until well combined. Sift it gradually over the cheese mixture. Knead until soft and well blended.
  • Using the cookie press and using the "star" attachment, turn out straws onto a parchment lined cookie sheet. The straws should be approximately 3 inches long.
  • Bake for ten minutes at 375℉ or until golden brown. Remove immediately arrange the straws on a cooling rack. Cool completely before storing in an airtight container. Makes about 150 straws.

Notes

The dough can be made in adnvace, wrapped and chilled.
Once prepared, these straws can be frozen in an airtight container for up to three months.
No cookie press? You can also use a piping bag with a large open star piping tip (approximately 1/2 inch opening).
