Chocolate Peanut Butter Cookies

Ingredients
  

  • cups sugar (300g)
  • 2 sticks unsalted butter, softened (226g)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • 10 oz Reese's Peanut Butter Chips

Instructions
 

  • Preheat the oven to 350 degrees and line cookie sheet with parchment paper.
  • In a medium sized bowl, add the flour, cocoa, baking soda, and baking powder. Whisk to blend and set aside.
  • In a mixing bowl, add sugar, softened butter, eggs, and vanilla. Using an electric mixer, beat on medium speed until lightened in color and fluffy. (Approximately 2 minutes.)
  • Next, add the flour mixture into the butter mixture, mixing on low speed just until incorporated. The batter will be thick. Then, stir in the peanut butter chips until evenly distributed.
  • Next, drop spoonfuls of cookie dough onto an a parchment lined or ungreased cookie sheet.
  • Bake at 350 degrees F for 8-10 minutes. Cool the cookies for 1-2 minutes before moving them to a cooling rack to cool completely. Makes 5 dozen.

Notes

Cookies can be frozen in an airtight container or freezer bag for up to three months.
