Easy Chicken Salad

Ingredients
  

  • 2-3 cups chopped chicken, cooked (you could use a pre-cooked rotisserie if you'd like)
  • ½ cup mayonnaise (increase amount to your liking)
  • 1-2 ribs of celery, diced
  • 1 teaspoon dijon mustard
  • ½ teaspoon seasoned salt (adjust amount to your liking)
  • teaspoon ground black pepper (adjust amount to your liking)
  • 2 tablespoons sweet pickle relish
  • ¼ cup golden raisins (optional)
  • ¼ cup slivered almonds (optional)

Instructions
 

  • Add all of the ingredients to a large bowl and mix to combine. Do a taste test and add more seasoning if needed. Serve/store in the refrigerator, covered for up to three days.
  • Serve in a sandwich, wrapped in romaine, over a salad, or on its own!

Notes

Optional additions: One cup green or red seedless grapes, sliced in half, 1/4 cup toasted pecans, 1 cup chopped apple (that has been tossed in orange juice or lemonade/lemon juice to prevent browning)
