Crust (You can use a store bought graham cracker crust if you prefer)
30 vanilla wafers, crushed
⅓cupbutter, melted
2tablespoonssugar
Filling
16ozLemon Pie Filling(We used a 16 oz can)
2½cupsVanilla Ice Cream, softened
Cool Whip or Whipping Cream
Instructions
Crust
Crush the vanilla wafers by putting them in a plastic bag/ziplock bag and crush using a rolling pin or food processor. Stir to combine the ingredients for the crust and then press into a 9 inch pie plate. Bake at 350 degrees F for 8 minutes. Set aside to cool, then freeze until ready to use.
Filling and Assembly
Place the lemon filling in a large bowl. Add the softened (but not melted) ice cream to the bowl bit my bit, mixing with an electric mixer until well combined. Pour into the cold crust, cover, and freeze overnight. Top with the whipped topping before serving.
Store covered in the freezer.
