Chocolate Pudding Cookies

Ingredients
  

  • cup All Purpose Flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt (If using salted butter, no need to use the salt.)
  • 2 sticks unsalted butter, softened (This is 1 cups)
  • ¾ cups light brown sugar
  • ¼ cup white sugar
  • 1 (3.4 oz) package instant chocolate pudding mix
  • 2 large eggs
  • teaspoons vanilla extract
  • 2 cups semisweet chocolate chips (adjust amount to your liking)

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Whisk together the all purpose flour, baking soda, and salt in a medium sized bowl and set aside.
  • Next, in a large bowl, cream the softened butter, brown sugar, and white sugar with an electric mixer on medium speed. Mix in the pudding mix and vanilla until blended. Mix in the eggs, one by one, mixing until combined.
  • Stir in the flour mixture, just until blended. Gently stir in the chocolate chips.
  • Drop the cookie dough in rounded spoonfuls onto the ungreased cookie sheets. Bake for 10-12 minutes. Edges will turn golden brown. Makes about 3 dozen.
  • Move the cookies to a cooling rack to cool. Then, store in an airtight container.

Notes

Once cooled completely, these cookies can be frozen in an airtight container or ziplock bag for up to three months!
