Gluten Free Peanut Butter Blossoms

This classic peanut butter & chocolate cookie recipe couldn’t be easier to make, and nobody would ever guess that they are gluten free. You will love how easy they are to make from scratch.

Ingredients

  • Creamy Peanut Butter (We used JIF)
  • Sugar
  • Egg
  • Vanilla extract
  • Hershey kisses

How to Make Gluten Free Peanut Butter Blossoms

  • In a mixing bowl, combine the peanut butter and sugar. Next, add the lightly beaten egg and vanilla extract, stirring until combined.
  • Roll or scoop one inch mounds of cookie dough onto an ungreased or parchment lined cookie sheet.
  • Space the cookie dough about two inches apart and bake at 350 degrees F for ten minutes or until the the edges are set and golden.
  • Press the freshly baked candy kisses into each cookie. Allow the cookies to cool & set up for five minutes before moving to a cooling rack.

Even with no flour (or gluten free flour) in the recipe, they bake up beautifully and have fantastic peanut butter and chocolate flavor.

Best way to Store the Cookies

Once the Peanut Butter Blossoms have cooled and firmed up, store in an airtight container for 3-5 days at room temperature. They will stay fresh even longer (up to a week) in the refrigerator, or up to three months in the freezer.

*When freezing, if the cookies still still a bit soft, or just to be on the safe side- you can “flash freeze” them on cookie sheets for a hour or so to firm them up before stacking into a freezer bag & placing back in the freezer.

  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 egg, beaten
  • 2 teaspoons vanilla extract
  • 24 Hershey's Kisses

Instructions
 

  • In a mixing bowl, combine the peanut butter and sugar. Add the egg and vanilla, stirring until well mixed.
  • Roll the dough into one inch balls on ungreased or parchment lined cookie sheets. Space them two inches apart and bake at 350 degrees F for ten minutes or until the edges are set and becoming more golden.
  • Press the freshly baked candy kisses into each cookie. Allow the cookies to cool & set up for five minutes before moving to a cooling rack with a spatula. This recipe makes approximately 2 dozen cookies.

Notes

We used creamy peanut butter, but you can also use crunchy if you’d like bits of peanuts in your cookies! 
These can be frozen or up to three months. If freezing, it is a good idea to “flash freeze” them first on a cookie sheet for 300 minutes to an hour to really firm them up before stacking them into a freezer bag or airtight container and freezing.
